Too many courgettes? Russborough volunteer Christie is from California.
Here is her recipe for very delicious courgette/ zucchini bread.

Christie’s Zucchini Bread

Sieve together the dry ingredients –

375 grams flour
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon cinnamon

Whisk together –

3 large eggs
225 grams vegetable oil
450 grams sugar
1 tablespoon vanilla

then, add to the dry ingredients and stir in 240 grams grated zucchini/courgettes

Bake at 165c for 40 minutes in 2 –  20×10×6 loaf pans
